Extra Virgin Olive Oil (AOVE)

Extra virgin olive oil is the heart of a traditional Valencian paella. Among the various types of olive oils, extra virgin olive oil stands out as the highest quality, offering superior flavour and purity.

We use “Les Cabanes” Extra Virgin Olive Oil AOVE from Juncosa de les Garrigues Cooperative in Lleida, Catalonia, Spain. Made from Arbequina olives, it is 100% natural, cold-extracted, and free from additives, preservatives, or colorants. Grown among forests and aromatic plants, it has a unique aroma and fruity flavour.

 

Rice

Tartana Rice (Variety “Albufera”) Grown in Valencia’s Albufera Natural Park by the Gorets family for five generations. The Albufera Natural Park is a treasured ecological and environmental area on the eastern Iberian Peninsula, it features a lagoon, marshes, rice paddies, and a sandy barrier separating it from the Mediterranean Sea.

This variety, a natural cross between “Bomba” and old “Sénia,” It combines the best traits of both offering a fluffy texture and excellent absorption. Ideal for paella recipes.

Saffron

Saffron is one of the most luxurious and sought-after spices in the world. At Carmen Paellas, we proudly use Spanish saffron from La Mancha, considered one of the finest globally.

Our premium saffron is hand-harvested and carefully dehydrated to preserve its aroma, colour, and flavour. Its production and processing—certified with a Denomination of Origin (D.O.)—are meticulously carried out in selected municipalities of Albacete, Ciudad Real, Cuenca, and Toledo.

For a traditional Paella Valenciana, we recommend preparing a saffron infusion: combine 1 gram of saffron with ½ litre of water and let it steep to fully extract its colour and flavour.

 

Garrofó (Big White Lima Bean)

A traditional Valencian ingredient almost disappeared from modern kitchens. Our “Garrofó Pintat” comes from Levante Benissanó Restaurant’s private garden. This exceptional legume belongs to the “Garrofó Pintat” variety, celebrated for its quality and flavour.

“Garrofó” can be harvested either fresh or dried, depending on its stage of maturity. The type you have here is known as “winter “Garrofó” which has undergone the drying process and should be prepared like any dried legume. To enjoy it at its best: hydrate in water for 8–12 hours, boil 10–15 minutes, discard water, and add to your paella.

 

Sweet smoked paprika

Made from elongated paprika, known as “corneta” or “cornicabra”, a dried product obtained by ground into a bright red powder, clean fruits of the Capsicum annuum pepper, which has a sweet flavour and typical aroma.

It has an intense red colour and is essential in traditional Valencian stews.
